When the Spanish arrived to Peru, bringing their culture, religion, customs and language, they found not primitive tribes, but a politically organized government with highly developed agriculture. They also find a proliferation of foods unknown in Europe whose preparation was a mixture of cultural influences of the peoples of the Andes and the coastal regions. From this meeting of both cultures and the combination of their different ways of eating developed a hybrid cooking of excellent taste and enormous creativity.

Two things give Peruvian food its distinctive edge. The first one is the country's huge biodiversity, with dozens of microclimates. Potatoes, quash, peanuts, hot peppers, beans and maize were all grown before the Spaniards arrived. Despite overfishing, the cold Humboldt current that hugs Peru's desert coast is still rich in fish and shellfish.

There is a great variety of plants in Peru due to its different climates, and the clever use of this variety of different plants gives a distinct personality to Peruvian cooking. Peruvian cooking then, is a testimony of the culture and the civilization of a people and as such is one of the richest legacies that a country can offer to the world.
